Zucchini - 2
Cherry Tomatoes - 1 cup
Feta Cheese - 1/4 cup, crumbled
Black Olives - 1/4 cup, sliced
Red Onion - 1/4 cup, thinly sliced
Extra Virgin Olive Oil - 2 tbsp
Balsamic Vinegar - 1 tbsp
Fresh Basil - 2 tbsp, chopped

Step 1: Prepare the Zucchini
Wash the zucchini and trim off the ends. Using a mandoline slicer or a sharp knife, thinly slice the zucchini lengthwise. Place the slices in a large bowl.
Step 2: Add Other Ingredients
Add cherry tomatoes, crumbled feta cheese, sliced black olives, and thinly sliced red onion to the bowl with the zucchini.
Step 3: Prepare the Dressing
In a small bowl, whisk together extra virgin olive oil, balsamic vinegar, chopped fresh basil, salt, and black pepper to make the dressing.
Step 4: Toss and Serve
Pour the dressing over the zucchini salad ingredients. Toss gently to coat everything with the dressing. Serve immediately or chill in the refrigerator for about 30 minutes before serving for enhanced flavor.
